- 1 lb ground turkey
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 6 large flour tortillas
- 2 tablespoons butter
- Optional toppings: sour cream, salsa, guacamole
Instructions
- Heat olive oil in a skillet over medium heat.
- Add diced onion and garlic, cook until softened.
- Add ground turkey and cook until browned.
- Stir in chili powder, cumin, paprika, salt, and black pepper.
- Cook for 2–3 more minutes to blend flavors, then remove from heat.
- Heat a clean skillet or griddle over medium heat.
- Place one tortilla in the skillet, sprinkle with a layer of cheese, add turkey mixture, then more cheese, and top with another tortilla.
- Cook until the bottom tortilla is golden and cheese begins to melt, about 2–3 minutes.
- Flip carefully and cook the other side until golden and cheese is fully melted.
- Repeat with remaining tortillas and filling.
- Slice into wedges and serve warm with sour cream, salsa, or guacamole.
Notes
You can mix in bell peppers or jalapeños with the turkey for extra flavor and texture.
