Description
A light and nourishing soup made with ground turkey, vegetables, and herbs.
Ingredients

- 500g ground turkey
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 zucchini, diced
- 1 can diced tomatoes (400g)
- 1.5L chicken broth
- 1 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp dried oregano
- Salt and pepper
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, garlic, carrots, and celery. Cook until softened.
- Add ground turkey and cook until browned.
- Stir in zucchini, diced tomatoes, broth, thyme, oregano, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 25–30 minutes.
- Adjust seasoning and serve hot.
Notes
This soup pairs well with crusty bread and can be stored in the fridge for 3 days.
