Description

A lighter twist on the classic stroganoff, this recipe uses ground turkey, mushrooms, and a creamy sauce served over egg noodles.


Ingredients

  • 12 oz egg noodles
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 2 tbsp all-purpose flour
  • 2 cups chicken broth
  • 1 cup sour cream
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 1 tsp paprika
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook egg noodles according to package instructions, then drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add onion and garlic, sauté until softened.
  3. Add ground turkey, season with salt, pepper, and paprika. Cook until browned.
  4. Stir in mushrooms and cook for 5 minutes until tender.
  5. Sprinkle flour over the mixture, stir well, and cook for 1 minute.
  6. Slowly pour in chicken broth while stirring to create a smooth sauce. Simmer for 5 minutes.
  7. Reduce heat to low, then stir in sour cream, Worcestershire sauce, and Dijon mustard. Simmer until creamy and thickened.
  8. Toss cooked egg noodles into the sauce or serve sauce over noodles.
  9. Garnish with fresh parsley before serving.

Notes

For a healthier version, substitute Greek yogurt for sour cream. This dish pairs well with a side salad or steamed vegetables.
