A lighter twist on the classic stroganoff, this recipe uses ground turkey, mushrooms, and a creamy sauce served over egg noodles.

- 1 lb ground turkey
- 12 oz egg noodles
- 2 tbsp olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 8 oz mushrooms, sliced
- 2 tbsp all-purpose flour
- 2 cups chicken broth
- 1 cup sour cream
- 1 tbsp Worcestershire sauce
- 1 tsp Dijon mustard
- 1 tsp paprika
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook egg noodles according to package instructions, then drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add onion and garlic, sauté until softened.
- Add ground turkey, season with salt, pepper, and paprika. Cook until browned.
- Stir in mushrooms and cook for 5 minutes until tender.
- Sprinkle flour over the mixture, stir well, and cook for 1 minute.
- Slowly pour in chicken broth while stirring to create a smooth sauce. Simmer for 5 minutes.
- Reduce heat to low, then stir in sour cream, Worcestershire sauce, and Dijon mustard. Simmer until creamy and thickened.
- Toss cooked egg noodles into the sauce or serve sauce over noodles.
- Garnish with fresh parsley before serving.
Notes
For a healthier version, substitute Greek yogurt for sour cream. This dish pairs well with a side salad or steamed vegetables.
