Ingredients

- 4 large bell peppers (any color)
- 1 lb ground turkey
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup cooked rice
- 1 can (14.5 oz) diced tomatoes
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 1/2 cups shredded mozzarella or cheddar cheese
- 1 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C). Grease a baking dish.
- Cut tops off bell peppers and remove seeds and membranes.
- In a skillet, heat olive oil and cook onion and garlic until softened.
- Add ground turkey and cook until browned. Drain excess fat.
- Stir in diced tomatoes, cooked rice, Italian seasoning, salt, and pepper. Simmer 5 minutes.
- Stuff mixture evenly into peppers and place in baking dish.
- Top with shredded cheese.
- Cover with foil and bake for 25 minutes. Remove foil and bake an additional 10 minutes until cheese is bubbly.
- Serve warm.
Notes
You can substitute quinoa for rice for a healthier twist.
