- 4 medium zucchinis
- 1 lb ground turkey
- 1/2 cup onion, diced
- 2 cloves garlic, minced
- 1 cup marinara sauce
- 1/2 cup mozzarella cheese, shredded
- 1/4 cup Parmesan cheese, grated
- 1 tbsp olive oil
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Cut zucchinis in half lengthwise and scoop out the centers.
- Heat olive oil in a skillet, add onion and garlic, sauté until softened.
- Add ground turkey, cook until browned.
- Stir in marinara sauce, Italian seasoning, salt, and pepper. Simmer 5 minutes.
- Place zucchini halves on a baking dish, fill with turkey mixture.
- Top with mozzarella and Parmesan cheese.
- Bake for 20–25 minutes until zucchini is tender and cheese is melted.
Notes
You can add chopped vegetables like bell peppers or mushrooms to the filling for extra flavor.
