  • 15 sweet rolls
  • 15 slices honey ham (about 12 oz)
  • 8 oz shredded cheddar cheese

Instructions

  1. Prepare the onion jam by heating olive oil in a skillet over medium heat, adding diced onions and a pinch of kosher salt, and cooking, stirring occasionally, until softened and lightly caramelized, about 10 minutes.
  2. Add rosemary, light brown sugar, and balsamic vinegar; continue cooking until the mixture thickens into a jammy consistency, about 15 minutes. Remove from heat and set aside to cool.
  3. In a small bowl, combine unsalted butter, minced garlic, thyme, parsley, chives, Dijon mustard, black pepper, kosher salt, chipotle powder, and Worcestershire sauce; mix until smooth to create the cowboy butter.
  4. Slice the sweet rolls horizontally and spread a generous layer of cowboy butter on the cut sides.
  5. Top each roll with a slice of honey ham and a sprinkle of shredded cheddar cheese.
  6. Place a dollop of warm onion jam over the cheese, then close the sandwich.
  7. Arrange the assembled sliders on a baking sheet and bake in a preheated oven at 350°F (175°C) for 10–12 minutes, until the cheese melts and the tops turn lightly golden.
