Description

Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 2 stalks celery, chopped
  • 3 potatoes, diced
  • 1 can (14 oz) diced tomatoes
  • 6 cups beef broth
  • 1 cup green beans (fresh or frozen)
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add ground beef and cook until browned. Drain excess fat.
  3. Add chopped onion and garlic, sauté until softened.
  4. Stir in carrots, celery, and potatoes. Cook for 5 minutes.
  5. Add diced tomatoes and beef broth, bring to a boil.
  6. Reduce heat to low, add Italian seasoning, salt, and pepper.
  7. Simmer for 30 minutes until vegetables are tender.
  8. Stir in green beans and cook for another 10 minutes.
  9. Taste and adjust seasoning before serving hot.

Notes

You can add corn, peas, or other favorite vegetables for variety. Serve with crusty bread for a complete meal.
