- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 3 carrots, sliced
- 2 stalks celery, chopped
- 3 potatoes, diced
- 1 can (14 oz) diced tomatoes
- 6 cups beef broth
- 1 cup green beans (fresh or frozen)
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add ground beef and cook until browned. Drain excess fat.
- Add chopped onion and garlic, sauté until softened.
- Stir in carrots, celery, and potatoes. Cook for 5 minutes.
- Add diced tomatoes and beef broth, bring to a boil.
- Reduce heat to low, add Italian seasoning, salt, and pepper.
- Simmer for 30 minutes until vegetables are tender.
- Stir in green beans and cook for another 10 minutes.
- Taste and adjust seasoning before serving hot.
Notes
You can add corn, peas, or other favorite vegetables for variety. Serve with crusty bread for a complete meal.
