- 2 cans (6 oz each) wild salmon, drained and flaked
- 1/4 cup harissa paste
- Zest of 1 orange
- 2 tablespoons fresh orange juice
- 1/4 cup chopped fresh parsley
- 2 green onions, thinly sliced
- 1/2 cup breadcrumbs
- 1 large egg
- Salt and black pepper to taste
- 2 tablespoons olive oil (for frying)
Instructions
- In a large bowl, combine salmon, harissa paste, orange zest, orange juice, parsley, green onions, breadcrumbs, and egg.
- Season the mixture with salt and pepper, then mix until well combined.
- Shape the mixture into 6 to 8 patties, pressing them firmly to hold their shape.
- Heat olive oil in a skillet over medium heat.
- Fry the patties in batches for 3–4 minutes per side, or until golden brown and heated through.
- Transfer to a plate lined with paper towels to drain excess oil.
- Serve warm with a dollop of yogurt, tahini sauce, or on a salad.
Notes
You can use fresh cooked salmon instead of canned if preferred. Adjust harissa to your spice level. Great for meal prep — store in fridge up to 3 days.
