Ingredients

  • 2 cans (6 oz each) wild salmon, drained and flaked
  • 1/4 cup harissa paste
  • Zest of 1 orange
  • 2 tablespoons fresh orange juice
  • 1/4 cup chopped fresh parsley
  • 2 green onions, thinly sliced
  • 1/2 cup breadcrumbs
  • 1 large egg
  • Salt and black pepper to taste
  • 2 tablespoons olive oil (for frying)

Instructions

  1. In a large bowl, combine salmon, harissa paste, orange zest, orange juice, parsley, green onions, breadcrumbs, and egg.
  2. Season the mixture with salt and pepper, then mix until well combined.
  3. Shape the mixture into 6 to 8 patties, pressing them firmly to hold their shape.
  4. Heat olive oil in a skillet over medium heat.
  5. Fry the patties in batches for 3–4 minutes per side, or until golden brown and heated through.
  6. Transfer to a plate lined with paper towels to drain excess oil.
  7. Serve warm with a dollop of yogurt, tahini sauce, or on a salad.

Notes

You can use fresh cooked salmon instead of canned if preferred. Adjust harissa to your spice level. Great for meal prep — store in fridge up to 3 days.
