Description

These healthy carrot cake bars are soft, naturally sweetened, and packed with wholesome ingredients—perfect for breakfast, snack time, or a light dessert.


Ingredients

  • 1 cup grated carrots
  • 1 cup almond flour
  • 1/2 cup rolled oats
  • 1/3 cup maple syrup or honey
  • 2 eggs
  • 1/4 cup unsweetened applesauce
  • 1/4 cup coconut oil, melted
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/3 cup chopped walnuts or pecans (optional)
  • 1/4 cup raisins (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a large bowl, whisk together eggs, maple syrup, applesauce, melted coconut oil, and vanilla.
  3. Stir in grated carrots.
  4. Add almond flour, oats, cinnamon, nutmeg, baking soda, and salt. Mix until just combined.
  5. Fold in nuts and raisins if using.
  6. Pour batter into prepared pan and smooth the top.
  7. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let cool completely before slicing into bars.

Notes

Store these bars in an airtight container in the fridge for up to 5 days. They also freeze well for longer storage. You can add a light cream cheese drizzle for an indulgent touch.
