- 1.5 lbs 96% Ground Beef
- 6 Mission Carb Balance Burrito Tortillas (10″ size)
- 2 Cups Fat Free Kraft Shredded Cheddar Cheese
- 1–2 Cups Shredded Lettuce
- 1 Cup Diced Tomatoes
- 1 Cup Fat Free Plain Greek Yogurt
- 2 Tbsp Taco Seasoning
- 1/2 Tsp Each Onion and Garlic Powder
- Salt/Pepper to Taste
- Olive Oil Spray
Instructions
- Preheat oven to 375°F and spray 9×13 baking dish with oil
- Brown ground beef in skillet over medium heat, drain fat
- Mix in taco seasoning, garlic powder, and onion powder
- Layer 3 tortillas in baking dish, tearing to cover bottom completely
- Spread beef mixture, then Greek yogurt, and half the cheese
- Repeat layers with remaining tortillas and ingredients
- Bake 20-25 minutes until golden and bubbly
- Top with lettuce and tomatoes before serving
Notes
Tips: Add black beans or corn for extra fiber. Substitute ground turkey for beef if preferred. Storage: Refrigerate leftovers in airtight container for up to 3 days. Reheat in oven for best texture.
