Description

These crispy Greek-inspired chickpea patties are packed with Mediterranean flavors. Perfect for a healthy lunch or vegetarian dinner option, they’re quick to make and freezer-friendly!


Ingredients

  • 2 cans (15 oz / 400 g each) chickpeas, drained and rinsed (or 3 cups / 460 g cooked chickpeas)
  • 1 medium onion, chopped
  • 3 cloves garlic, grated
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1 teaspoon lemon zest (optional)
  • 2 tablespoons fresh parsley, chopped (sub dill or cilantro)
  • 4 tablespoons all-purpose flour
  • ¼ cup grated parmesan or crumbled feta
  • 2 tablespoons water
  • ½ teaspoon salt
  • Black pepper to taste

Instructions

  1. In a food processor, pulse chickpeas until coarsely mashed (leave some texture)
  2. Transfer to bowl and mix with onion, garlic, oregano, paprika, lemon zest, parsley, flour, cheese, water, salt and pepper
  3. Form mixture into 8 equal patties (about ½ inch thick)
  4. Heat olive oil in non-stick skillet over medium heat
  5. Cook patties 4-5 minutes per side until golden brown and crisp
  6. Serve warm with tzatziki sauce in pita bread or over salad

Notes

Tips: For crispier patties, refrigerate mixture 30 minutes before shaping. Substitutions: Use gluten-free flour if needed. Storage: Freeze uncooked patties between parchment paper for up to 3 months.
