These crispy Greek-inspired chickpea patties are packed with Mediterranean flavors. Perfect for a healthy lunch or vegetarian dinner option, they’re quick to make and freezer-friendly!
Ingredients

- 2 cans (15 oz / 400 g each) chickpeas, drained and rinsed (or 3 cups / 460 g cooked chickpeas)
- 1 medium onion, chopped
- 3 cloves garlic, grated
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- 1 teaspoon lemon zest (optional)
- 2 tablespoons fresh parsley, chopped (sub dill or cilantro)
- 4 tablespoons all-purpose flour
- ¼ cup grated parmesan or crumbled feta
- 2 tablespoons water
- ½ teaspoon salt
- Black pepper to taste
Instructions
- In a food processor, pulse chickpeas until coarsely mashed (leave some texture)
- Transfer to bowl and mix with onion, garlic, oregano, paprika, lemon zest, parsley, flour, cheese, water, salt and pepper
- Form mixture into 8 equal patties (about ½ inch thick)
- Heat olive oil in non-stick skillet over medium heat
- Cook patties 4-5 minutes per side until golden brown and crisp
- Serve warm with tzatziki sauce in pita bread or over salad
Notes
Tips: For crispier patties, refrigerate mixture 30 minutes before shaping. Substitutions: Use gluten-free flour if needed. Storage: Freeze uncooked patties between parchment paper for up to 3 months.
