- 1 pound large shrimp, peeled and deveined (26–30 count)
- 1 tablespoon olive oil
- 1 tablespoon cumin
- 1 teaspoon garlic powder
- 1/2 teaspoon chili powder
- 1/4 teaspoon kosher salt
- 2 cups Mexican Coleslaw (or shredded red cabbage)
- 8 corn tortillas
- 3 tablespoons mayonnaise
- 1 1/2 teaspoons Mexican hot sauce (like Cholula)
- Fresh cilantro, for garnish
- 2 limes, cut into wedges
Instructions
- In a bowl, combine shrimp with olive oil, cumin, garlic powder, chili powder and salt. Marinate 15 minutes.
- Preheat grill or grill pan to medium-high. Thread shrimp onto skewers and grill 2-3 minutes per side until opaque.
- Warm tortillas on grill for 20 seconds per side. Keep wrapped in a clean towel.
- Make creamy lime sauce: Mix mayonnaise and hot sauce in small bowl.
- Assemble tacos: Layer slaw, 3-4 shrimp, drizzle of sauce, and cilantro in each tortilla.
- Serve immediately with lime wedges for squeezing.

Tips: Preheat grill thoroughly to prevent sticking. Serve with avocado slices for extra creaminess.
