Ingredients

  • 3 cups red or green cabbage
  • 1 red bell pepper, chopped thinly
  • 2 scallions, thinly chopped
  • 3 garlic cloves, minced
  • 1 ½ tbsp tamari sauce
  • 1 tbsp olive oil
  • 3 tbsp chopped parsley or cilantro
  • 220g (8 oz) ground beef
  • 1 carrot, cut into strips
  • 2 tsp crushed red pepper

Instructions

  1. Heat olive oil in a large skillet or wok over medium-high heat. Add ground beef, breaking it up with a spoon, and cook until browned, about 5-6 minutes. Drain excess fat.
  2. Add garlic and crushed red pepper, sauté for 30 seconds until fragrant.
  3. Toss in the sliced carrot and chopped red bell pepper; stir-fry for 2-3 minutes until slightly tender.
  4. Add the shredded cabbage and continue to stir-fry for another 3-4 minutes, until the cabbage is crisp-tender.
  5. Pour in tamari sauce, stir to coat all ingredients, and cook for an additional minute.
  6. Stir in chopped parsley or cilantro, remove from heat, and serve hot.

Notes

Tip: Substitute ground turkey or tofu for a lighter option. Leftovers store well in an airtight container in the fridge for up to 3 days; reheat gently to retain texture.
