- 3 cups red or green cabbage
- 1 red bell pepper, chopped thinly
- 2 scallions, thinly chopped
- 3 garlic cloves, minced
- 1 ½ tbsp tamari sauce
- 1 tbsp olive oil
- 3 tbsp chopped parsley or cilantro
- 220g (8 oz) ground beef
- 1 carrot, cut into strips
- 2 tsp crushed red pepper
Instructions
- Heat olive oil in a large skillet or wok over medium-high heat. Add ground beef, breaking it up with a spoon, and cook until browned, about 5-6 minutes. Drain excess fat.
- Add garlic and crushed red pepper, sauté for 30 seconds until fragrant.
- Toss in the sliced carrot and chopped red bell pepper; stir-fry for 2-3 minutes until slightly tender.
- Add the shredded cabbage and continue to stir-fry for another 3-4 minutes, until the cabbage is crisp-tender.
- Pour in tamari sauce, stir to coat all ingredients, and cook for an additional minute.
- Stir in chopped parsley or cilantro, remove from heat, and serve hot.
