Description
This healthy sheet pan buffalo chicken is a perfect weeknight meal that comes together quickly with minimal cleanup! Tender chicken and crispy potatoes roast together before getting tossed in spicy buffalo sauce, all served with a tangy blue cheese yogurt sauce for cooling contrast. Gluten-free meal prep friendly!

SHEET PAN:
- 1 lb baby white potatoes, diced
- 1 red onion, sliced
- 2 large chicken breasts, diced
- 1/2 tbsp olive oil
- 1/2 tbsp paprika
- 2 tsp garlic powder
- 2 tsp onion powder
- 1/2 tsp salt
- 1/4 cup buffalo sauce
- Diced green onions for garnish
BLUE CHEESE SAUCE:
- 1/2 cup Greek yogurt
- 2 tbsp white vinegar
- 2 oz blue cheese, crumbled
- Salt + pepper to taste
Instructions
- Preheat oven to 425°F (220°C). Line baking sheet with parchment paper.
- Toss potatoes and onions with olive oil and half the spices. Spread in single layer on sheet.
- Season chicken with remaining spices and arrange between vegetables. Roast 25 minutes.
- Toss everything with buffalo sauce. Return to oven for 5-7 minutes until caramelized.
- While baking, whisk blue cheese sauce ingredients until smooth. Adjust seasoning.
- Garnish with green onions and serve hot with blue cheese sauce on the side.
Notes
- Make it milder: Use ranch dressing instead of buffalo sauce
- Vegetarian option: Replace chicken with cauliflower florets
