- 4 large onions, thinly sliced
- 2 whole garlic bulbs
- 3 tablespoons olive oil
- 2 tablespoons butter
- 1 teaspoon sugar
- 1/2 cup dry white wine (optional)
- 6 cups vegetable or beef broth
- 2 sprigs fresh thyme
- 2 bay leaves
- Salt and black pepper to taste
- Baguette slices, toasted
- 1 cup shredded Gruyère or Swiss cheese
Instructions
- Preheat oven to 200°C (400°F).
- Slice the top off garlic bulbs, drizzle with olive oil, wrap in foil, and roast for 30–35 minutes until soft.
- In a large pot, heat butter and remaining olive oil over medium heat.
- Add sliced onions and sugar, cook slowly for 30–40 minutes, stirring occasionally, until deep golden and caramelized.
- Squeeze roasted garlic cloves into the pot and stir to combine.
- Deglaze with white wine (if using) and let it reduce slightly.
- Add broth, thyme, bay leaves, salt, and pepper. Simmer for 20 minutes.
- Remove thyme sprigs and bay leaves.
- Ladle soup into oven-safe bowls, top with toasted baguette slices, and sprinkle generously with cheese.
- Place bowls under broiler until cheese is melted and bubbly.
- Serve hot and enjoy.
Notes
For extra richness, use beef broth. To make it vegetarian, choose vegetable broth and swap cheese for a plant-based alternative if desired.
