Description

Ingredients

  • 4 large onions, thinly sliced
  • 2 whole garlic bulbs
  • 3 tablespoons olive oil
  • 2 tablespoons butter
  • 1 teaspoon sugar
  • 1/2 cup dry white wine (optional)
  • 6 cups vegetable or beef broth
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • Salt and black pepper to taste
  • Baguette slices, toasted
  • 1 cup shredded Gruyère or Swiss cheese

Instructions

  1. Preheat oven to 200°C (400°F).
  2. Slice the top off garlic bulbs, drizzle with olive oil, wrap in foil, and roast for 30–35 minutes until soft.
  3. In a large pot, heat butter and remaining olive oil over medium heat.
  4. Add sliced onions and sugar, cook slowly for 30–40 minutes, stirring occasionally, until deep golden and caramelized.
  5. Squeeze roasted garlic cloves into the pot and stir to combine.
  6. Deglaze with white wine (if using) and let it reduce slightly.
  7. Add broth, thyme, bay leaves, salt, and pepper. Simmer for 20 minutes.
  8. Remove thyme sprigs and bay leaves.
  9. Ladle soup into oven-safe bowls, top with toasted baguette slices, and sprinkle generously with cheese.
  10. Place bowls under broiler until cheese is melted and bubbly.
  11. Serve hot and enjoy.

Notes

For extra richness, use beef broth. To make it vegetarian, choose vegetable broth and swap cheese for a plant-based alternative if desired.
