- 8 oz penne pasta
- 1 lb lean ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (15 oz) diced tomatoes (with juices)
- 1 cup low-sodium beef broth
- 1/2 cup plain Greek yogurt
- 1/4 cup grated Parmesan cheese
- 1 tbsp Italian seasoning
- Salt and pepper to taste
- Fresh basil or parsley for garnish
- Olive oil (for cooking)
Instructions
- Cook pasta according to package directions. Drain and set aside.
- Heat olive oil in large skillet over medium heat. Add onion and cook until translucent (3-4 minutes).
- Add ground beef, breaking apart with spoon. Cook until browned (5-6 minutes). Drain excess fat.
- Stir in garlic, Italian seasoning, salt, and pepper. Cook 1 minute until fragrant.
- Add diced tomatoes with juices and beef broth. Simmer for 10 minutes.
- Remove from heat. Stir in Greek yogurt and Parmesan until creamy.
- Add cooked pasta to skillet, tossing to coat. Garnish with fresh herbs.
Notes
Tips: For extra veggies, add spinach during last 2 minutes of cooking.
Substitutions: Use sour cream instead of Greek yogurt if preferred.
Storage: Refrigerate in airtight container for up to 4 days. Add splash of broth when reheating.
