  • 1 pound boneless skinless chicken thighs
  • 6 slices baguette, toasted
  • 12 thin slices Gruyere cheese (6 ounces total)

Instructions

  1. Heat olive oil in Dutch oven over medium-low. Add onions and shallots with salt. Cook 35 minutes, stirring occasionally, until deeply caramelized.
  2. Sprinkle flour over onions and cook 2 minutes, stirring constantly. Deglaze with wine and vinegar, scraping browned bits.
  3. Add thyme, bay leaves, and broth. Bring to simmer. Add chicken, cover, and simmer 15 minutes until chicken reaches 165°F.
  4. Remove chicken and shred. Return meat to pot and discard herbs.
  5. Portion soup into oven-safe bowls. Top each with toasted baguette slice and 2 cheese slices. Broil 2-3 minutes until bubbly.
  6. Rest 5 minutes before serving.
