- ¼ cup sherry vinegar
- 4 fresh thyme sprigs
- 2 dried bay leaves
- 8 cups chicken bone broth
- 1 pound boneless skinless chicken thighs
- 6 slices baguette, toasted
- 12 thin slices Gruyere cheese (6 ounces total)
Instructions
- Heat olive oil in Dutch oven over medium-low. Add onions and shallots with salt. Cook 35 minutes, stirring occasionally, until deeply caramelized.
- Sprinkle flour over onions and cook 2 minutes, stirring constantly. Deglaze with wine and vinegar, scraping browned bits.
- Add thyme, bay leaves, and broth. Bring to simmer. Add chicken, cover, and simmer 15 minutes until chicken reaches 165°F.
- Remove chicken and shred. Return meat to pot and discard herbs.
- Portion soup into oven-safe bowls. Top each with toasted baguette slice and 2 cheese slices. Broil 2-3 minutes until bubbly.
- Rest 5 minutes before serving.
