Description

A hearty and nutritious ground beef power bowl loaded with protein, veggies, and grains to fuel your day.


Ingredients

  • 1 lb lean ground beef
  • 1 cup quinoa, cooked
  • 1 cup roasted sweet potatoes
  • 1 cup steamed broccoli
  • 1/2 cup chickpeas, rinsed and drained
  • 1/4 cup shredded cheddar cheese
  • 2 tbsp olive oil
  • 1 tbsp soy sauce
  • 2 cloves garlic, minced
  • 1/2 tsp smoked paprika
  • Salt and black pepper to taste

Instructions

  1. Cook quinoa according to package instructions and set aside.
  2. Heat olive oil in a skillet over medium heat.
  3. Add minced garlic and sauté until fragrant.
  4. Add ground beef, season with smoked paprika, salt, and pepper, and cook until browned.
  5. Roast sweet potatoes in the oven until tender.
  6. Assemble bowls with a base of quinoa.
  7. Top with ground beef, roasted sweet potatoes, steamed broccoli, and chickpeas.
  8. Drizzle with soy sauce and sprinkle shredded cheddar cheese on top.
  9. Serve warm as a balanced high-protein meal.

Notes

Swap quinoa for brown rice or farro if desired. For extra protein, add a boiled egg on top.
