Ingredients

- 1 lb lean ground beef
- 1 cup quinoa, cooked
- 1 cup roasted sweet potatoes
- 1 cup steamed broccoli
- 1/2 cup chickpeas, rinsed and drained
- 1/4 cup shredded cheddar cheese
- 2 tbsp olive oil
- 1 tbsp soy sauce
- 2 cloves garlic, minced
- 1/2 tsp smoked paprika
- Salt and black pepper to taste
Instructions
- Cook quinoa according to package instructions and set aside.
- Heat olive oil in a skillet over medium heat.
- Add minced garlic and sauté until fragrant.
- Add ground beef, season with smoked paprika, salt, and pepper, and cook until browned.
- Roast sweet potatoes in the oven until tender.
- Assemble bowls with a base of quinoa.
- Top with ground beef, roasted sweet potatoes, steamed broccoli, and chickpeas.
- Drizzle with soy sauce and sprinkle shredded cheddar cheese on top.
- Serve warm as a balanced high-protein meal.
Notes
Swap quinoa for brown rice or farro if desired. For extra protein, add a boiled egg on top.
