  • 1 tsp Italian herb blend
  • ⅓ cup (78.86 ml) low‑sodium chicken broth
  • 12 oz (340.2 g) protein pasta, cooked al dente
  • 2 small zucchini, cut into half moons
  • 1 cup (210 g) cottage cheese
  • 2 cups (490 g) marinara sauce
  • 1 cup (112 g) shredded mozzarella
  • ½ cup (50 g) shredded parmesan

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced onion and sauté until translucent, about 3‑4 minutes.
  2. Stir in minced garlic and cook for 30 seconds until fragrant.
  3. Add ground beef, season with salt, pepper, garlic powder, onion powder, paprika, and Italian herb blend. Cook, breaking up the meat, until browned, about 6‑8 minutes.
  4. Pour in low‑sodium chicken broth and stir, scraping up any browned bits. Simmer for 2 minutes.
  5. Meanwhile, prepare the pasta according to package directions, cooking it al dente. Drain and set aside.
  6. In a large mixing bowl, combine cooked pasta, zucchini halves, cottage cheese, marinara sauce, and half of the shredded mozzarella. Mix well.
  7. Fold the meat mixture into the pasta mixture, ensuring everything is evenly coated.
  8. Transfer the combined mixture to a greased 9×13‑inch baking dish. Sprinkle the remaining mozzarella and grated parmesan evenly over the top.
