- 1 tablespoon (15 ml) unsalted butter
- 2 medium cloves garlic, grated on microplane grater (about 2 teaspoons)
- 1 teaspoon dried oregano
- Pinch red pepper flakes
- Kosher salt
- 1 medium yellow onion, peeled and split in half
- 2 (6-inch) sprigs fresh basil with leaves attached
- 1 teaspoon sugar
Instructions
- In a medium saucepan, heat olive oil and butter over medium heat until butter melts
- Add garlic, oregano, and red pepper flakes. Cook 1 minute until fragrant but not browned
- Pour in tomatoes with their juices, crushing tomatoes by hand as you add them
- Add onion halves, basil sprigs, and sugar. Season with 1/2 teaspoon salt
- Simmer uncovered for 30 minutes, stirring occasionally to prevent sticking
- Remove onion halves and basil stems. Adjust seasoning with additional salt if needed
- Use immersion blender for smooth sauce or leave slightly chunky
