Ingredients

Scale
  • 500 grams (17.5 ounces, about 3 1/2 cups) all-purpose flour
  • 10 grams (0.35 ounces, about 2 teaspoons) salt
  • 5 grams (0.175 ounce, about 1 teaspoon) rapid-rise yeast
  • 30 grams (1 ounce, about 2 1/4 tablespoons) extra-virgin olive oil, plus more for greasing pan
  • 325 grams (11.5 ounces, about 1 cup plus 6 tablespoons) water
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons unsalted butter
  • 4 cloves garlic, grated on a microplane grater
  • 1 tablespoon dried oregano
  • 1 teaspoon red pepper flakes
  • 1 (28-ounce) can whole peeled tomatoes, roughly puréed in a food processor or blender
  • 1 tablespoon sugar
  • 1 shallot or small onion
  • Kosher salt
  • 1/2 ounce finely grated Pecorino Romano cheese

Instructions

  1. In a large bowl, mix flour, salt, and yeast.
  2. Add olive oil and water, then mix until dough forms.
  3. Knead the dough on a floured surface until smooth, about 10 minutes.
  4. Transfer to a lightly oiled bowl, cover, and let rise for 2 hours until doubled in size.
  5. Meanwhile, prepare the sauce by heating olive oil and butter in a saucepan.
  6. Add garlic, oregano, red pepper flakes, and cook until fragrant.
  7. Add puréed tomatoes, sugar, and whole shallot or onion.
  8. Season with salt and simmer for 45 minutes, stirring occasionally.
  9. Preheat oven to 450°F (232°C).
  10. Press dough into a greased sheet pan, letting it reach the edges evenly.
  11. Spread the tomato sauce generously on top, leaving a small border.
  12. Sprinkle Pecorino Romano cheese evenly over the sauce.
  13. Bake for 25-30 minutes until crust is golden and edges are crispy.
  14. Let cool slightly, slice, and serve warm or at room temperature.

Notes

Great for make-ahead. Best enjoyed the same day, but can be stored in the fridge and reheated.
