  • Author: Crystal
  • Total Time: 25 minutes
  • Yield: 8 servings 1x

Description

Indulge in a rich, creamy cheese dip that blends savory ground beef with a splash of lager, melted cheddar, and pepper jack for a spicy kick. This hot beer cheese dip is perfect for game day, parties, or a comforting night in. Easy to make, loaded with flavor, and ready in under 30 minutes!

Ingredients

Scale
  • 1 lb (450 g) ground beef – choose a lean but flavorful cut
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup beer – a lager or pale ale works best for mild flavor
  • 8 oz (225 g) cream cheese, softened
  • 1 cup shredded cheddar cheese
  • ½ cup shredded pepper jack cheese (for extra heat)
  • ½ teaspoon smoked paprika
  • ¼ teaspoon cayenne pepper (optional, for more spice)
  • Salt and black pepper, to taste
  • 1 tablespoon butter
  • 1 tablespoon all-purpose flour
  • Tortilla chips, crackers, or sliced baguette, for serving
  • Optional garnish: chopped green onions or jalapeños

Instructions

  1. Heat butter in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 3 minutes. Stir in garlic and cook for another 30 seconds.
  2. Sprinkle flour over the onions and garlic, stirring to coat. Cook for 1 minute to remove raw flour taste.
  3. Gradually pour in the beer, whisking constantly to prevent lumps. Bring to a gentle simmer and let reduce for 2 minutes.
  4. Reduce heat to low and add the softened cream cheese, stirring until fully melted and smooth.
  5. Stir in shredded cheddar and pepper jack cheeses until melted. Add smoked paprika, cayenne pepper (if using), salt, and black pepper. Mix well.
  6. Serve the hot dip immediately with tortilla chips, crackers, or sliced baguette. Garnish with chopped green onions or jalapeños if desired.

Notes

Tip: For a smoother dip, blend the mixture with an immersion blender before serving. Substitute the beer with chicken broth for a non‑alcoholic version, or use a stout for deeper flavor. Store leftovers in an airtight container in the refrigerator for up to 3 days; reheat gently on the stove, adding a splash of milk if needed.
