Description
Indulge in a rich, creamy cheese dip that blends savory ground beef with a splash of lager, melted cheddar, and pepper jack for a spicy kick. This hot beer cheese dip is perfect for game day, parties, or a comforting night in. Easy to make, loaded with flavor, and ready in under 30 minutes!
Ingredients
- 1 lb (450 g) ground beef – choose a lean but flavorful cut
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 cup beer – a lager or pale ale works best for mild flavor
- 8 oz (225 g) cream cheese, softened
- 1 cup shredded cheddar cheese
- ½ cup shredded pepper jack cheese (for extra heat)
- ½ teaspoon smoked paprika
- ¼ teaspoon cayenne pepper (optional, for more spice)
- Salt and black pepper, to taste
- 1 tablespoon butter
- 1 tablespoon all-purpose flour
- Tortilla chips, crackers, or sliced baguette, for serving
- Optional garnish: chopped green onions or jalapeños
Instructions
- Heat butter in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 3 minutes. Stir in garlic and cook for another 30 seconds.
- Sprinkle flour over the onions and garlic, stirring to coat. Cook for 1 minute to remove raw flour taste.
- Gradually pour in the beer, whisking constantly to prevent lumps. Bring to a gentle simmer and let reduce for 2 minutes.
- Reduce heat to low and add the softened cream cheese, stirring until fully melted and smooth.
- Stir in shredded cheddar and pepper jack cheeses until melted. Add smoked paprika, cayenne pepper (if using), salt, and black pepper. Mix well.
- Serve the hot dip immediately with tortilla chips, crackers, or sliced baguette. Garnish with chopped green onions or jalapeños if desired.
Notes
Tip: For a smoother dip, blend the mixture with an immersion blender before serving. Substitute the beer with chicken broth for a non‑alcoholic version, or use a stout for deeper flavor. Store leftovers in an airtight container in the refrigerator for up to 3 days; reheat gently on the stove, adding a splash of milk if needed.
