Ingredients

  • 1 tsp hot sauce (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 12-cup muffin tin.
  2. Blend: In a blender, combine eggs, cottage cheese, salt, pepper, and hot sauce. Mix until smooth.
  3. Layer: Divide bacon, peppers, and cheese evenly into muffin cups.
  4. Pour: Fill each cup ¾ full with egg mixture.
  5. Bake: 18–20 minutes, until edges are golden and centers are just set.
  6. Cool: Let sit 5 minutes before removing from tin.
