Ingredients

  • 6 bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon onion powder

Instructions

  1. Preheat the grill to medium-high heat.
  2. Pat the chicken thighs dry with paper towels.
  3. Brush the chicken thighs with olive oil on all sides.
  4. Season evenly with salt, black pepper, garlic powder, paprika, thyme, and onion powder.
  5. Place the chicken thighs skin-side down on the grill.
  6. Grill for 6–8 minutes until the skin is crispy and well-marked.
  7. Flip the chicken thighs and continue grilling for 12–15 minutes.
  8. Cook until the internal temperature reaches 165°F (74°C).
  9. Remove from the grill and let rest for 5 minutes before serving.

Notes

Letting the chicken rest after grilling helps keep the meat juicy. Adjust grill heat as needed to avoid flare-ups.
