- 2 tbsp olive oil
- 2 medium onions, chopped
- 2 heads garlic, cloves peeled and minced
- 1 tbsp fresh ginger, grated
- 6 cups vegetable broth
- 2 medium carrots, sliced
- 2 celery stalks, chopped
- 1 tsp turmeric powder
- 1/2 tsp crushed red pepper flakes (optional)
- 2 sprigs fresh thyme
- 1 bay leaf
- Salt and pepper to taste
- Juice of 1 lemon
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onions, garlic, and ginger, sauté until fragrant and softened.
- Stir in carrots, celery, turmeric, and red pepper flakes, cook for 3-4 minutes.
- Pour in vegetable broth, add thyme and bay leaf, then bring to a boil.
- Reduce heat and let simmer for 25-30 minutes until vegetables are tender.
- Remove thyme and bay leaf, then stir in lemon juice.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
Notes
For extra healing power, add a pinch of cayenne or fresh spinach at the end of cooking. This soup freezes well and is great to keep on hand during flu season.
