These Instant Pot Bacon Mini Meatloaves are juicy, flavorful, and cook in a fraction of the time—perfect for busy weeknights.
Ingredients

- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1/4 cup milk
- 1 egg
- 1/4 cup finely chopped onion
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 6 slices of bacon
- 1/4 cup ketchup
Instructions
- In a bowl, combine ground beef, breadcrumbs, milk, egg, onion, garlic powder, salt, and pepper. Mix until just combined.
- Form the mixture into 3–4 mini loaves.
- Wrap each loaf with a slice of bacon.
- Place a trivet inside the Instant Pot and add 1 cup of water.
- Place the meatloaves on the trivet.
- Seal the lid and cook on high pressure for 20 minutes.
- Quick release the pressure and carefully remove the meatloaves.
- Brush tops with ketchup and optionally broil in oven for 3–5 minutes to crisp bacon.
Notes
Don’t overmix the meat to keep the texture tender. Broiling at the end is optional but adds a delicious crisp finish.
