- 6 bone-in, skinless chicken thighs
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1/3 cup balsamic vinegar
- 1/2 cup chicken broth
- 2 tablespoons honey
- 1 tablespoon soy sauce
- 1 teaspoon dried thyme
- Salt and black pepper to taste
- Fresh basil or parsley, chopped
Instructions
- Season the chicken thighs with salt and black pepper.
- Set the Instant Pot to sauté mode and add olive oil.
- Sear the chicken thighs briefly, then remove and set aside.
- Add garlic to the pot and sauté until fragrant.
- Pour in balsamic vinegar and chicken broth, scraping the bottom.
- Stir in honey, soy sauce, and dried thyme.
- Return the chicken thighs to the Instant Pot.
- Close the lid and set to pressure cook on high.
- Cook for 10 minutes, then allow a natural release.
- Open the lid and spoon the sauce over the chicken.
- Garnish with fresh herbs before serving.
Notes
For a thicker sauce, simmer on sauté mode for a few minutes after pressure cooking. Serve with rice, potatoes, or steamed vegetables.
