This Instant Pot Meatloaf and Mashed Potatoes recipe is the ultimate comfort food combo — juicy, flavorful meatloaf with creamy, buttery mashed potatoes, all made together in one pot!

- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1/4 cup milk
- 1 egg
- 1/2 onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp ketchup
- 1 tbsp Worcestershire sauce
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 lbs potatoes, peeled and cut into chunks
- 1 cup water or beef broth
- 2 tbsp butter
- 1/4 cup milk (for mashing)
- Salt and pepper to taste (for potatoes)
- Additional ketchup or BBQ sauce for topping
Instructions
- In a large bowl, mix ground beef, breadcrumbs, milk, egg, onion, garlic, ketchup, Worcestershire sauce, salt, and pepper until just combined.
- Shape the mixture into a loaf and place it on a piece of aluminum foil, folding the edges up to make a tray.
- Place the cut potatoes in the bottom of the Instant Pot and add water or broth.
- Set the trivet over the potatoes and place the foil meatloaf tray on top.
- Close the lid and cook on High Pressure for 25 minutes, then quick release the pressure.
- Carefully remove the meatloaf and spread ketchup or BBQ sauce on top. Optionally, broil it in the oven for 3-5 minutes for a caramelized top.
- Drain any remaining liquid from the potatoes, add butter, milk, salt, and pepper, then mash to desired consistency.
- Serve slices of meatloaf with a generous helping of mashed potatoes.
Notes
You can add shredded cheese or chopped herbs to the mashed potatoes for extra flavor. For leaner meat, try using ground turkey.
