Description

This Instant Pot Meatloaf and Mashed Potatoes recipe is the ultimate comfort food combo — juicy, flavorful meatloaf with creamy, buttery mashed potatoes, all made together in one pot!


Ingredients

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 egg
  • 1/2 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp ketchup
  • 1 tbsp Worcestershire sauce
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 lbs potatoes, peeled and cut into chunks
  • 1 cup water or beef broth
  • 2 tbsp butter
  • 1/4 cup milk (for mashing)
  • Salt and pepper to taste (for potatoes)
  • Additional ketchup or BBQ sauce for topping

Instructions

  1. In a large bowl, mix ground beef, breadcrumbs, milk, egg, onion, garlic, ketchup, Worcestershire sauce, salt, and pepper until just combined.
  2. Shape the mixture into a loaf and place it on a piece of aluminum foil, folding the edges up to make a tray.
  3. Place the cut potatoes in the bottom of the Instant Pot and add water or broth.
  4. Set the trivet over the potatoes and place the foil meatloaf tray on top.
  5. Close the lid and cook on High Pressure for 25 minutes, then quick release the pressure.
  6. Carefully remove the meatloaf and spread ketchup or BBQ sauce on top. Optionally, broil it in the oven for 3-5 minutes for a caramelized top.
  7. Drain any remaining liquid from the potatoes, add butter, milk, salt, and pepper, then mash to desired consistency.
  8. Serve slices of meatloaf with a generous helping of mashed potatoes.

Notes

You can add shredded cheese or chopped herbs to the mashed potatoes for extra flavor. For leaner meat, try using ground turkey.
