A quick and juicy meatloaf made effortlessly in the Instant Pot, finished with a sweet and tangy glaze.

- 2 lbs ground beef
- 1 cup breadcrumbs
- 1/2 cup milk
- 2 large eggs
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1/2 cup ketchup
- 2 tbsp Worcestershire sauce
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried oregano
- 1/2 tsp paprika
- 1/4 cup fresh parsley, chopped
- Glaze: 1/2 cup ketchup, 2 tbsp brown sugar, 1 tbsp Dijon mustard
- 1 cup water (for Instant Pot)
Instructions
- In a large bowl, combine the breadcrumbs and milk. Let soak for 5 minutes.
- Add the ground beef, eggs, onion, garlic, ketchup, Worcestershire sauce, salt, pepper, oregano, paprika, and parsley. Mix until just combined.
- Shape the mixture into a loaf and place it on a piece of foil, folding the edges up to form a packet.
- Pour 1 cup of water into the Instant Pot and insert the trivet.
- Place the foil-wrapped meatloaf on the trivet.
- Seal the Instant Pot lid and set to High Pressure for 35 minutes.
- Once cooking is done, allow a 10-minute natural release, then quick release the remaining pressure.
- Carefully remove the meatloaf and discard excess liquid.
- In a small bowl, whisk together ketchup, brown sugar, and Dijon mustard for the glaze.
- Spread glaze over the top of the meatloaf.
- Optional: Place under the broiler for 3β5 minutes to caramelize the glaze.
- Let rest for 10 minutes before slicing and serving.
Notes
For added flavor, try mixing beef and pork. Use the broiler step for a sticky, caramelized glaze.
