Description
A quick and easy homemade peach jam made in the Instant Pot without any added pectin. Perfectly sweet and tangy!
Ingredients

- 5 medium sized peaches, fresh, ripe, sweet and juicy
- 1/4 cup lemon juice, filtered, from one medium sized lemon
- 1.5 cups sugar (may use up to 2 cups)
Instructions
- Peel and pit the peaches, then chop them into small pieces.
- Add the chopped peaches, lemon juice, and sugar into the Instant Pot. Mix well.
- Close the lid and set the Instant Pot to ‘Saute’ mode. Cook while stirring until the sugar dissolves and the mixture starts to bubble.
- Press ‘Cancel’, then select ‘Pressure Cook’ or ‘Manual’ mode and set the timer for 1 minute on high pressure.
- Once done, let the pressure release naturally for 15 minutes, then perform a quick release for any remaining pressure.
- Open the lid and use a potato masher or immersion blender to reach your desired consistency.
- Turn on ‘Saute’ mode again and cook for about 5-10 minutes until the jam thickens to your liking.
- Transfer the hot jam into sterilized jars and seal immediately. Let cool to room temperature before refrigerating.
Notes
You can adjust the sugar based on the sweetness of your peaches. Store in the refrigerator for up to 3 weeks or freeze for longer storage.
