- 2 Tbsp avocado oil, or olive oil
- 1 tsp dried oregano
- 1/2 teaspoon dried thyme
- sea salt and black pepper, to taste
- 1/2 cup shredded sharp cheddar cheese
- 4 slices nitrate‑free bacon, cooked and crumbled
- 1/2 cup plain Greek yogurt

- 1/4 red onion, peeled and diced
- 1 Tbsp chopped cilantro, scallions, or parsley leaves
Instructions
- Preheat the oven to 425°F (220°C).
- Slice the potatoes thinly and toss with oil, oregano, thyme, salt, and pepper.
- Arrange the slices on a baking sheet in a single layer and bake for 20‑25 minutes, or until crisp and golden.
- Remove from the oven and sprinkle the shredded cheddar evenly over the hot potatoes.
- Return to the oven for 2‑3 minutes, or until the cheese melts.
- Top with crumbled bacon, chopped tomato, diced onion, Greek yogurt, and fresh herbs.
- Serve immediately while hot and crunchy.
Notes
For a lighter version, use dairy‑free cheese or swap Greek yogurt for sour cream. Leftovers store well in an airtight container for up to 2 days; reheat in a skillet to restore crispness. Feel free to add jalapeños or avocado for extra flavor.
