Description

Discover the comforting taste of homemade Irish Soda Bread Muffins, a quick and easy treat that brings the warm, rustic flavors of Ireland to your kitchen. Perfect for breakfast or a snack, these fluffy muffins combine sweet raisins, bright orange zest, and a tender crumb, all made without yeast. Ideal for family gatherings, these muffins are simple to prepare and taste just like Grandma’s baking.

Ingredients

Scale
  • 2 ¼ cups (11 ¼ oz / 319 g) all-purpose flour
  • ¼ cup (2 oz / 57 g) granulated sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • 1 ⅓ cups (6 ½ oz / 185 g) raisins
  • 2 teaspoons orange zest
  • 1 large egg, room temperature
  • 1 ½ cups (12 fl oz / 360 ml) buttermilk
  • 6 tablespoons (3 oz / 85 g) butter, melted
  • Egg wash (for brushing)

Instructions

  1. Preheat the oven to 375°F (190°C) and line a 12‑cup muffin tin with paper liners or lightly grease.
  2. In a large bowl whisk together flour, sugar, baking powder, baking soda, and salt.
  3. Fold in the raisins and orange zest, then make a well in the center.
  4. In a separate bowl beat the egg, then stir in the buttermilk and melted butter until combined.
  5. Pour the wet mixture into the dry ingredients and stir just until a soft dough forms; do not overmix.
  6. Divide the dough evenly among the muffin cups and brush the tops with egg wash.
  7. Bake for 18‑20 minutes, or until a toothpick inserted into the center comes out clean and the tops are golden brown.
  8. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For a gluten‑free version, substitute the all‑purpose flour with a 1:1 gluten‑free blend. If you don’t have buttermilk, mix 1 ½ cups milk with 1 ½ tablespoons lemon juice or white vinegar and let sit 5 minutes. Store the muffins in an airtight container at room temperature for up to 3 days, or freeze for up to 2 months. Reheat briefly in the microwave before serving.
