  • Neutral oil for frying
  • 1/2 yellow onion, sliced thin
  • 2 serrano peppers, thinly sliced (seeds removed if desired)
  • 3 small red jalapeños, thinly sliced
  • 2 green onions, finely chopped
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon coarse ground black pepper
  • 1 teaspoon sugar
  • 1 tablespoon corn starch
  • 1 egg white, beaten
  • Oil for frying (additional)
  • One batch triple cooked fries (see recipe)
  • Curry sauce (see recipe)

Instructions

  1. In a bowl, combine chicken strips, soy sauce, sesame oil, garlic paste, and a pinch of salt. Marinate for 15 minutes.
  2. Toss chicken with corn starch and beaten egg white until lightly coated.
  3. Heat neutral oil in a wok over high heat. Add chicken and stir‑fry until golden and cooked through, about 3‑4 minutes.
  4. Remove chicken and set aside. In the same pan, add sliced onion and peppers; stir‑fry for 2 minutes.
  5. Return chicken to the pan, add green onions, sugar, and black pepper. Stir to combine.
  6. Drizzle with red pepper flakes if desired and serve immediately with crispy fries and curry sauce.

Notes

Tip: For extra crunch, double‑coat the chicken in cornstarch. Substitute chicken thigh with tofu for a vegetarian version. Store leftovers in an airtight container for up to 2 days; reheat in a hot skillet to retain crispness.
