- 2 serrano peppers, thinly sliced (seeds removed if desired)
- 3 small red jalapeños, thinly sliced
- 2 green onions, finely chopped

- 1/2 teaspoon coarse ground black pepper
- 1 teaspoon sugar
- 1 tablespoon corn starch
- 1 egg white, beaten
- Oil for frying (additional)

Instructions
- In a bowl, combine chicken strips, soy sauce, sesame oil, garlic paste, and a pinch of salt. Marinate for 15 minutes.
- Toss chicken with corn starch and beaten egg white until lightly coated.
- Heat neutral oil in a wok over high heat. Add chicken and stir‑fry until golden and cooked through, about 3‑4 minutes.
- Remove chicken and set aside. In the same pan, add sliced onion and peppers; stir‑fry for 2 minutes.
- Return chicken to the pan, add green onions, sugar, and black pepper. Stir to combine.
- Drizzle with red pepper flakes if desired and serve immediately with crispy fries and curry sauce.

Tip: For extra crunch, double‑coat the chicken in cornstarch. Substitute chicken thigh with tofu for a vegetarian version. Store leftovers in an airtight container for up to 2 days; reheat in a hot skillet to retain crispness.
