Description

A low-carb, keto-friendly Thai-inspired stir fry with ground turkey, fresh vegetables, and a savory-sweet sauce full of bold flavors.


Ingredients

  • 1 lb ground turkey
  • 2 tbsp coconut oil
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced into half-moons
  • 1 cup broccoli florets
  • 3 green onions, chopped
  • 2 tbsp soy sauce or coconut aminos
  • 1 tbsp fish sauce
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tsp chili flakes (optional)
  • 1/2 cup fresh basil leaves
  • Lime wedges (for serving)

Instructions

  1. Heat coconut oil in a large skillet or wok over medium-high heat.
  2. Add garlic and sauté until fragrant.
  3. Add ground turkey and cook until browned, breaking it apart with a spoon.
  4. Stir in bell pepper, zucchini, and broccoli. Cook for 5–6 minutes until tender-crisp.
  5. Add soy sauce (or coconut aminos), fish sauce, rice vinegar, sesame oil, and chili flakes. Stir to combine and cook for 2 more minutes.
  6. Remove from heat and stir in fresh basil leaves.
  7. Serve hot with lime wedges for squeezing over the top.

Notes

For extra heat, add sliced Thai chili peppers. Serve as is or with cauliflower rice for a more filling keto meal.
