- 1 lb ground turkey
- 1 tbsp sesame oil
- 2 cloves garlic, minced
- 1/2 onion, finely chopped
- 1/4 cup low-sodium soy sauce
- 2 tbsp brown sugar
- 1 tbsp rice vinegar
- 1 tbsp gochujang (Korean chili paste)
- 1 tsp ground ginger
- 2 cups cooked rice (white or brown)
- 1 cup shredded carrots
- 1 cup cucumber slices
- 1 cup steamed broccoli
- 2 green onions, sliced
- Sesame seeds for garnish
Instructions
- Heat sesame oil in a large skillet over medium heat.
- Add ground turkey and cook until browned, breaking it apart with a spoon.
- Stir in onion and garlic, cooking until fragrant.
- In a small bowl, whisk together soy sauce, brown sugar, rice vinegar, gochujang, and ginger.
- Pour sauce over turkey and simmer for 3-4 minutes until slightly thickened.
- Assemble bowls with rice, ground turkey mixture, shredded carrots, cucumber, and steamed broccoli.
- Top with green onions and sesame seeds before serving.
Notes
For extra heat, add more gochujang or a drizzle of sriracha. This dish can also be made with cauliflower rice for a lighter option.
