Description

A flavorful Korean-inspired ground turkey bowl with a sweet-savory sauce, fresh vegetables, and rice for a quick and satisfying meal.


Ingredients

  • 1 lb ground turkey
  • 1 tbsp sesame oil
  • 2 cloves garlic, minced
  • 1/2 onion, finely chopped
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp rice vinegar
  • 1 tbsp gochujang (Korean chili paste)
  • 1 tsp ground ginger
  • 2 cups cooked rice (white or brown)
  • 1 cup shredded carrots
  • 1 cup cucumber slices
  • 1 cup steamed broccoli
  • 2 green onions, sliced
  • Sesame seeds for garnish

Instructions

  1. Heat sesame oil in a large skillet over medium heat.
  2. Add ground turkey and cook until browned, breaking it apart with a spoon.
  3. Stir in onion and garlic, cooking until fragrant.
  4. In a small bowl, whisk together soy sauce, brown sugar, rice vinegar, gochujang, and ginger.
  5. Pour sauce over turkey and simmer for 3-4 minutes until slightly thickened.
  6. Assemble bowls with rice, ground turkey mixture, shredded carrots, cucumber, and steamed broccoli.
  7. Top with green onions and sesame seeds before serving.

Notes

For extra heat, add more gochujang or a drizzle of sriracha. This dish can also be made with cauliflower rice for a lighter option.
