Description
A simple one-pan lemon garlic salmon tray bake with roasted vegetables for a healthy and flavorful meal.
Ingredients

- 4 salmon fillets
- 2 lemons (1 sliced, 1 juiced)
- 4 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
- 1 lb baby potatoes, halved
- 1 cup cherry tomatoes
- 1 cup broccoli florets
- 1 red onion, sliced
Instructions
- Preheat oven to 400°F (200°C).
- On a large baking tray, arrange potatoes, broccoli, tomatoes, and onion.
- Drizzle with half of the olive oil, season with half the garlic, oregano, salt, and pepper. Toss to coat.
- Roast vegetables for 15 minutes.
- Remove tray from oven and add salmon fillets on top of vegetables.
- Drizzle salmon with remaining olive oil, lemon juice, garlic, and seasonings. Top with lemon slices.
- Return tray to oven and bake for 12–15 minutes, until salmon is cooked through and vegetables are tender.
- Serve warm, garnished with fresh parsley if desired.
Notes
For extra flavor, marinate the salmon in lemon juice and garlic for 20 minutes before baking. Works with other vegetables like asparagus or zucchini.
