- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsalted butter
- 1 cup water
- 2 large eggs
- 1/2 cup sour cream
- 1 tablespoon lemon zest
- 1/4 cup fresh lemon juice
- 1 teaspoon vanilla extract
- 1 1/2 cups powdered sugar
- 2 tablespoons lemon juice (for glaze)
- 1 tablespoon milk (for glaze)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.
- In a large bowl, whisk together flour, sugar, baking soda, and salt.
- In a saucepan, combine butter and water. Bring to a boil, then pour into dry ingredients and mix well.
- Stir in eggs, sour cream, lemon zest, lemon juice, and vanilla until smooth.
- Pour batter into prepared pan and smooth the top.
- Bake for 25–30 minutes or until a toothpick inserted comes out clean. Let cool.
- For the glaze, whisk together powdered sugar, lemon juice, and milk until smooth.
- Pour glaze over cooled cake and spread evenly.
- Allow glaze to set before slicing and serving.
Notes
For extra lemon flavor, add more zest to the batter or glaze. This cake stores well covered at room temperature for 2–3 days.
