Ingredients

  • 2 heads of garlic
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 medium onion, diced
  • 4 large russet potatoes, peeled and cubed
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • Salt and pepper, to taste
  • Fresh chives, chopped (for garnish)

Instructions

  1. Preheat oven to 200°C (400°F).
  2. Slice the tops off garlic heads, drizzle with olive oil, wrap in foil, and roast for 40 minutes until soft and golden.
  3. In a large pot, melt butter over medium heat. Sauté onion until translucent.
  4. Add cubed potatoes and vegetable broth. Bring to a boil, then reduce to a simmer until potatoes are tender, about 15 minutes.
  5. Squeeze roasted garlic cloves into the pot and stir.
  6. Use an immersion blender to blend the soup until smooth.
  7. Stir in heavy cream, then season with salt and pepper to taste.
  8. Serve hot, garnished with fresh chives.

Notes

For extra depth, try roasting the potatoes alongside the garlic before adding them to the soup.
