Ingredients

Scale
  • 3 medium zucchini, shredded
  • 1 teaspoon salt
  • 2 large eggs
  • 1/4 cup crumbled feta or grated parmesan
  • 1/4 cup shredded mozzarella or your favorite cheese
  • 2 cloves garlic, minced
  • 2 scallions (green onions), finely chopped
  • 1/4 cup parsley or herbs of choice, finely chopped
  • 1/4 teaspoon each ground black pepper, chili powder, garlic powder (to taste)
  • 1/2 cup almond flour
  • 1 tablespoon oil (for frying)

Instructions

  1. Place shredded zucchini in a colander, sprinkle with salt, and let sit for 10 minutes to release moisture. Squeeze out excess liquid.
  2. In a large bowl, mix the zucchini, eggs, feta, mozzarella, garlic, scallions, parsley, spices, and almond flour until combined.
  3. Heat oil in a non-stick pan over medium heat.
  4. Scoop batter into the pan and flatten into fritters.
  5. Cook for 3–4 minutes on each side until golden brown and crispy.
  6. Transfer to a paper towel-lined plate and serve warm.

Notes

You can customize the herbs and cheeses to your taste. Make sure to squeeze out as much moisture as possible for crispier fritters.
