- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1 egg
- 1/2 cup onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup milk
- 1 cup shredded cheddar cheese (for meatloaf)
- Salt and pepper to taste
- 2 cups elbow macaroni
- 2 cups shredded cheddar cheese (for topping)
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 2 cups milk
- 1/2 tsp paprika
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, combine ground beef, breadcrumbs, egg, onion, garlic, 1/2 cup milk, 1 cup cheddar cheese, salt, and pepper. Mix well.
- Press the meat mixture into a greased baking dish to form a flat meatloaf layer.
- Bake uncovered for 25 minutes.
- Meanwhile, cook macaroni according to package directions. Drain and set aside.
- In a saucepan, melt butter, whisk in flour, and cook for 1 minute.
- Gradually whisk in 2 cups milk until smooth, then stir in paprika and 2 cups shredded cheese until melted.
- Toss the cooked macaroni with the cheese sauce.
- Remove meatloaf from the oven and spread the mac and cheese evenly over the top.
- Sprinkle extra cheddar cheese on top and bake for an additional 15 minutes until bubbly and golden.
- Let cool for 5 minutes before slicing and serving.
Notes
For extra flavor, add a layer of ketchup or barbecue sauce over the meatloaf before topping with macaroni and cheese.
