Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cloves garlic, minced
  • ¾ cup low-sodium chicken broth
  • ½ cup sun-dried tomatoes, chopped
  • ½ cup heavy cream
  • ¼ cup Parmesan cheese, grated
  • 1 tablespoon fresh thyme leaves
  • 1 teaspoon red pepper flakes (optional)
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • Fresh basil, for garnish

Instructions

  1. Season chicken breasts with salt and black pepper.
  2. Heat olive oil in a large skillet over medium heat.
  3. Sear chicken on both sides until golden brown and cooked through, then remove and set aside.
  4. In the same skillet, sauté garlic until fragrant.
  5. Pour in chicken broth and scrape any brown bits from the pan.
  6. Add sun-dried tomatoes, heavy cream, Parmesan, thyme, and red pepper flakes.
  7. Simmer for a few minutes until sauce thickens slightly.
  8. Return chicken to skillet and coat with sauce.
  9. Let everything simmer together for 5 minutes.
  10. Garnish with fresh basil and serve hot.

Great served over pasta, mashed potatoes, or crusty bread to soak up the sauce.
