- 4 boneless, skinless chicken breasts
- 2 cloves garlic, minced
- ¾ cup low-sodium chicken broth
- ½ cup sun-dried tomatoes, chopped
- ½ cup heavy cream
- ¼ cup Parmesan cheese, grated
- 1 tablespoon fresh thyme leaves
- 1 teaspoon red pepper flakes (optional)
- Salt and black pepper, to taste
- 2 tablespoons olive oil
- Fresh basil, for garnish
Instructions
- Season chicken breasts with salt and black pepper.
- Heat olive oil in a large skillet over medium heat.
- Sear chicken on both sides until golden brown and cooked through, then remove and set aside.
- In the same skillet, sauté garlic until fragrant.
- Pour in chicken broth and scrape any brown bits from the pan.
- Add sun-dried tomatoes, heavy cream, Parmesan, thyme, and red pepper flakes.
- Simmer for a few minutes until sauce thickens slightly.
- Return chicken to skillet and coat with sauce.
- Let everything simmer together for 5 minutes.
- Garnish with fresh basil and serve hot.

Great served over pasta, mashed potatoes, or crusty bread to soak up the sauce.
