Description

Mini meatloaf muffins topped with creamy mashed potato frosting for a fun and comforting dinner twist.


Ingredients

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/2 cup milk
  • 1 egg
  • 1/2 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cups mashed potatoes (prepared)
  • 2 tbsp butter
  • 2 tbsp milk (for potatoes)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, combine ground beef, breadcrumbs, milk, egg, onion, garlic, ketchup, Worcestershire sauce, salt, and pepper.
  3. Mix until well combined.
  4. Divide mixture evenly into a greased muffin tin.
  5. Bake for 20–25 minutes until cooked through.
  6. Meanwhile, prepare mashed potatoes by mixing potatoes with butter and milk until creamy.
  7. Transfer mashed potatoes into a piping bag with a star tip.
  8. Once muffins are baked, let them cool slightly, then pipe mashed potatoes on top to resemble frosting.
  9. Serve warm with extra ketchup or gravy if desired.

Notes

For a colorful topping, garnish with chopped parsley or paprika. Can be made ahead and reheated.
