Mini meatloaf muffins topped with creamy mashed potato frosting for a fun and comforting dinner twist.
Ingredients

- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1/2 cup milk
- 1 egg
- 1/2 onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup ketchup
- 1 tbsp Worcestershire sauce
- 1 tsp salt
- 1/2 tsp black pepper
- 2 cups mashed potatoes (prepared)
- 2 tbsp butter
- 2 tbsp milk (for potatoes)
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, combine ground beef, breadcrumbs, milk, egg, onion, garlic, ketchup, Worcestershire sauce, salt, and pepper.
- Mix until well combined.
- Divide mixture evenly into a greased muffin tin.
- Bake for 20–25 minutes until cooked through.
- Meanwhile, prepare mashed potatoes by mixing potatoes with butter and milk until creamy.
- Transfer mashed potatoes into a piping bag with a star tip.
- Once muffins are baked, let them cool slightly, then pipe mashed potatoes on top to resemble frosting.
- Serve warm with extra ketchup or gravy if desired.
Notes
For a colorful topping, garnish with chopped parsley or paprika. Can be made ahead and reheated.
