This classic meatloaf recipe is juicy, flavorful, and topped with a sweet and tangy glaze that takes it over the top.

- 2 pounds ground beef
- 1 cup breadcrumbs
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 2 large eggs
- 1/2 cup milk
- 1/4 cup ketchup
- 2 tablespoons Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 1/4 cup chopped parsley
For the glaze:
- 1/2 cup ketchup
- 2 tablespoons brown sugar
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the ground beef, breadcrumbs, onion, garlic, eggs, milk, ketchup, Worcestershire sauce, salt, pepper, thyme, and parsley.
- Mix until just combined. Do not overmix.
- Transfer the mixture to a baking sheet or loaf pan and shape into a loaf.
- In a small bowl, whisk together the glaze ingredients: ketchup, brown sugar, Dijon mustard, and apple cider vinegar.
- Spoon half of the glaze over the top of the meatloaf.
- Bake for 45 minutes, then remove from oven and spread the remaining glaze on top.
- Return to the oven and bake for another 15 minutes, or until internal temperature reaches 160°F (70°C).
- Let rest for 10 minutes before slicing and serving.
Notes
Avoid overmixing the meat to keep the meatloaf tender. Let it rest before slicing to retain juices.
