Description

Ingredients

  • 2 pounds ground beef
  • 1 cup breadcrumbs
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 large eggs
  • 1/2 cup milk
  • 1/4 cup ketchup
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/4 cup chopped parsley

For the glaze:

  • 1/2 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the ground beef, breadcrumbs, onion, garlic, eggs, milk, ketchup, Worcestershire sauce, salt, pepper, thyme, and parsley.
  3. Mix until just combined. Do not overmix.
  4. Transfer the mixture to a baking sheet or loaf pan and shape into a loaf.
  5. In a small bowl, whisk together the glaze ingredients: ketchup, brown sugar, Dijon mustard, and apple cider vinegar.
  6. Spoon half of the glaze over the top of the meatloaf.
  7. Bake for 45 minutes, then remove from oven and spread the remaining glaze on top.
  8. Return to the oven and bake for another 15 minutes, or until internal temperature reaches 160°F (70°C).
  9. Let rest for 10 minutes before slicing and serving.

Notes

Avoid overmixing the meat to keep the meatloaf tender. Let it rest before slicing to retain juices.
