Ingredients

- 2 salmon fillets
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 4 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, sliced
- 1/4 red onion, thinly sliced
- 1/4 cup kalamata olives
- 1/4 cup crumbled feta cheese
- Juice of 1 lemon
- 1 tablespoon balsamic vinegar
Instructions
- Season the salmon fillets with olive oil, oregano, salt, and pepper.
- Grill or pan-sear the salmon over medium heat for 4-5 minutes per side, until cooked through. Set aside.
- In a large bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, and olives.
- Drizzle with lemon juice and balsamic vinegar. Toss gently to combine.
- Top the salad with grilled salmon and crumbled feta.
- Serve immediately.
Notes
For extra flavor, marinate the salmon for 15 minutes before cooking. You can also add avocado or cooked quinoa for a more filling meal.
