Description

This Mediterranean Sheet Pan Turkey and Veggies is a healthy, colorful, and flavorful one-pan meal loaded with lean turkey and fresh roasted vegetables.


Ingredients

  • 1 lb ground turkey
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 zucchini, sliced
  • 1 red onion, sliced
  • 1 cup cherry tomatoes
  • 3 tbsp olive oil
  • 2 tsp dried oregano
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup crumbled feta cheese
  • 2 tbsp fresh parsley, chopped
  • Lemon wedges, for serving

Instructions

  1. Preheat oven to 400Β°F (200Β°C). Line a large sheet pan with parchment paper.
  2. In a large bowl, combine ground turkey with 1 tbsp olive oil, garlic powder, paprika, salt, and pepper. Mix well and form into small meatballs.
  3. On the sheet pan, arrange bell peppers, zucchini, red onion, and cherry tomatoes. Drizzle with remaining olive oil and sprinkle with oregano. Toss to coat evenly.
  4. Place turkey meatballs among the vegetables on the sheet pan.
  5. Roast for 20-25 minutes, until vegetables are tender and turkey is cooked through.
  6. Remove from oven and sprinkle with feta cheese and fresh parsley.
  7. Serve hot with lemon wedges on the side.

Notes

For a complete meal, serve with warm pita bread, hummus, or couscous.
