This Mediterranean Sheet Pan Turkey and Veggies is a healthy, colorful, and flavorful one-pan meal loaded with lean turkey and fresh roasted vegetables.

- 1 lb ground turkey
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 zucchini, sliced
- 1 red onion, sliced
- 1 cup cherry tomatoes
- 3 tbsp olive oil
- 2 tsp dried oregano
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup crumbled feta cheese
- 2 tbsp fresh parsley, chopped
- Lemon wedges, for serving
Instructions
- Preheat oven to 400Β°F (200Β°C). Line a large sheet pan with parchment paper.
- In a large bowl, combine ground turkey with 1 tbsp olive oil, garlic powder, paprika, salt, and pepper. Mix well and form into small meatballs.
- On the sheet pan, arrange bell peppers, zucchini, red onion, and cherry tomatoes. Drizzle with remaining olive oil and sprinkle with oregano. Toss to coat evenly.
- Place turkey meatballs among the vegetables on the sheet pan.
- Roast for 20-25 minutes, until vegetables are tender and turkey is cooked through.
- Remove from oven and sprinkle with feta cheese and fresh parsley.
- Serve hot with lemon wedges on the side.
Notes
For a complete meal, serve with warm pita bread, hummus, or couscous.
