- 1 lb ground beef
- 1 cup long grain white rice (uncooked)
- 1 small onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 (15 oz) can corn, drained
- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can diced tomatoes
- 1 (8 oz) can tomato sauce
- 1 ½ cups beef broth
- 1 tbsp taco seasoning
- 1 tsp chili powder
- Salt and pepper, to taste
- 1 ½ cups shredded cheddar cheese
- Fresh cilantro, chopped (for garnish)
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet over medium heat, cook ground beef until browned. Drain excess fat.
- Add diced onion, bell pepper, and garlic. Sauté until softened, about 5 minutes.
- Stir in rice, corn, black beans, diced tomatoes, tomato sauce, beef broth, taco seasoning, chili powder, salt, and pepper.
- Bring the mixture to a simmer and let cook for 5–7 minutes, stirring occasionally.
- Transfer everything to a greased 9×13 inch baking dish and cover with foil.
- Bake for 35–40 minutes or until the rice is tender and liquid is absorbed.
- Remove foil, sprinkle cheddar cheese evenly on top, and bake for an additional 5–10 minutes, until cheese is melted and bubbly.
- Garnish with chopped cilantro and serve hot.
Notes
For added spice, top with jalapeños or a dash of hot sauce before serving.
