Description

This Mexican Ground Beef Casserole with Rice is a cheesy, hearty, and flavor-packed one-dish meal, perfect for busy weeknights and always a hit with the whole family.


Ingredients

  • 1 lb ground beef
  • 1 cup long grain white rice (uncooked)
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 (15 oz) can corn, drained
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can diced tomatoes
  • 1 (8 oz) can tomato sauce
  • 1 ½ cups beef broth
  • 1 tbsp taco seasoning
  • 1 tsp chili powder
  • Salt and pepper, to taste
  • 1 ½ cups shredded cheddar cheese
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet over medium heat, cook ground beef until browned. Drain excess fat.
  3. Add diced onion, bell pepper, and garlic. Sauté until softened, about 5 minutes.
  4. Stir in rice, corn, black beans, diced tomatoes, tomato sauce, beef broth, taco seasoning, chili powder, salt, and pepper.
  5. Bring the mixture to a simmer and let cook for 5–7 minutes, stirring occasionally.
  6. Transfer everything to a greased 9×13 inch baking dish and cover with foil.
  7. Bake for 35–40 minutes or until the rice is tender and liquid is absorbed.
  8. Remove foil, sprinkle cheddar cheese evenly on top, and bake for an additional 5–10 minutes, until cheese is melted and bubbly.
  9. Garnish with chopped cilantro and serve hot.

Notes

For added spice, top with jalapeños or a dash of hot sauce before serving.
