Ingredients

  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 can (400g) black beans, drained and rinsed
  • 1 can (400g) corn kernels, drained
  • 1 can (400g) diced tomatoes
  • 2 tbsp olive oil
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper (optional)
  • Salt and pepper to taste
  • 100g shredded cheddar cheese
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add onion, garlic, and red bell pepper. Sauté until softened.
  3. Add ground beef and cook until browned.
  4. Stir in chili powder, cumin, smoked paprika, cayenne, salt, and pepper.
  5. Add black beans, corn, and diced tomatoes. Stir well and simmer for 10 minutes.
  6. Sprinkle shredded cheddar cheese over the skillet and cover until melted.
  7. Remove from heat, garnish with fresh cilantro, and serve with lime wedges.

Notes
