Description

A cheesy, spicy, low-carb casserole loaded with ground beef, veggies, and Mexican flavors – perfect for a quick keto dinner.


Ingredients

  • 1 lb (450g) ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1/2 cup sour cream
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • 1 1/2 cups shredded cheddar cheese
  • 1 tbsp olive oil
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat oven to 180°C (350°F).
  2. In a skillet, heat olive oil over medium heat. Add diced onion and garlic; sauté until fragrant.
  3. Add ground beef and cook until browned. Drain excess fat if needed.
  4. Stir in bell pepper, canned tomatoes, chili powder, cumin, salt, and pepper. Cook for 5 minutes.
  5. Remove from heat and mix in sour cream.
  6. Transfer mixture to a baking dish and top with shredded cheese.
  7. Bake for 15-20 minutes or until cheese is melted and bubbly.
  8. Garnish with chopped cilantro before serving, if desired.

Notes

Serve with avocado slices or a side of cauliflower rice for a complete keto meal. You can prep this dish ahead and reheat.
