- 1 lb (450g) ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 can (10 oz) diced tomatoes with green chilies
- 1/2 cup sour cream
- 1 tsp chili powder
- 1/2 tsp cumin
- Salt and pepper to taste
- 1 1/2 cups shredded cheddar cheese
- 1 tbsp olive oil
- Fresh cilantro for garnish (optional)
Instructions
- Preheat oven to 180°C (350°F).
- In a skillet, heat olive oil over medium heat. Add diced onion and garlic; sauté until fragrant.
- Add ground beef and cook until browned. Drain excess fat if needed.
- Stir in bell pepper, canned tomatoes, chili powder, cumin, salt, and pepper. Cook for 5 minutes.
- Remove from heat and mix in sour cream.
- Transfer mixture to a baking dish and top with shredded cheese.
- Bake for 15-20 minutes or until cheese is melted and bubbly.
- Garnish with chopped cilantro before serving, if desired.
Notes
Serve with avocado slices or a side of cauliflower rice for a complete keto meal. You can prep this dish ahead and reheat.
