Description

A comforting Mexican-inspired garlic soup made with roasted garlic, broth, warm spices, and finished with a refreshing squeeze of lime for a zesty twist.


Ingredients

  • 2 whole garlic bulbs
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 6 cups chicken or vegetable broth
  • 2 slices day-old bread, cubed
  • 2 eggs, lightly beaten
  • 2 tablespoons fresh lime juice
  • Salt and black pepper, to taste
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions

  1. Preheat oven to 375°F (190°C). Slice the tops off garlic bulbs, drizzle with olive oil, wrap in foil, and roast for 35-40 minutes until soft and golden.
  2. In a large pot, heat olive oil over medium heat and sauté onion until softened.
  3. Squeeze roasted garlic cloves from skins into the pot and stir in cumin and smoked paprika.
  4. Add broth and bring to a simmer. Stir in cubed bread and cook for 10 minutes until softened.
  5. Slowly drizzle in beaten eggs while stirring to create delicate ribbons.
  6. Season with salt, pepper, and lime juice.
  7. Serve hot, garnished with cilantro and lime wedges on the side.

Notes

For extra richness, add a sprinkle of queso fresco on top. You can also spice it up with a pinch of chili flakes or fresh jalapeño.
