- 2 whole garlic bulbs
- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 6 cups chicken or vegetable broth
- 2 slices day-old bread, cubed
- 2 eggs, lightly beaten
- 2 tablespoons fresh lime juice
- Salt and black pepper, to taste
- Fresh cilantro, chopped (for garnish)
- Lime wedges (for serving)
Instructions
- Preheat oven to 375°F (190°C). Slice the tops off garlic bulbs, drizzle with olive oil, wrap in foil, and roast for 35-40 minutes until soft and golden.
- In a large pot, heat olive oil over medium heat and sauté onion until softened.
- Squeeze roasted garlic cloves from skins into the pot and stir in cumin and smoked paprika.
- Add broth and bring to a simmer. Stir in cubed bread and cook for 10 minutes until softened.
- Slowly drizzle in beaten eggs while stirring to create delicate ribbons.
- Season with salt, pepper, and lime juice.
- Serve hot, garnished with cilantro and lime wedges on the side.
Notes
For extra richness, add a sprinkle of queso fresco on top. You can also spice it up with a pinch of chili flakes or fresh jalapeño.
