Ingredients

- 1 lb ground beef
- 1/2 lb ground pork
- 1 packet taco seasoning
- 1/2 cup breadcrumbs
- 1/2 cup salsa
- 1 egg
- 1/2 cup shredded cheddar cheese
- 1/4 cup chopped onion
- 1/4 cup chopped bell pepper
- 1/4 cup milk
- Salt and pepper to taste
- Extra cheese and salsa for topping
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, combine ground beef, pork, taco seasoning, breadcrumbs, salsa, egg, cheese, onion, bell pepper, and milk.
- Mix well until evenly combined.
- Shape mixture into a loaf and place in a greased loaf pan.
- Bake for 45–50 minutes, or until internal temperature reaches 160°F (71°C).
- Top with extra salsa and cheese, then bake an additional 5–10 minutes until cheese is melted.
- Let rest for 5 minutes before slicing and serving.
Notes
Serve with Mexican rice, guacamole, or a fresh green salad for a complete meal.
