Description

A flavorful twist on classic meatloaf infused with bold Mexican spices, topped with melty cheese and a zesty taco-inspired glaze.


Ingredients

  • 1 lb ground beef
  • 1/2 lb ground pork
  • 1 packet taco seasoning
  • 1/2 cup breadcrumbs
  • 1/2 cup salsa
  • 1 egg
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped onion
  • 1/4 cup chopped bell pepper
  • 1/4 cup milk
  • Salt and pepper to taste
  • Extra cheese and salsa for topping

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine ground beef, pork, taco seasoning, breadcrumbs, salsa, egg, cheese, onion, bell pepper, and milk.
  3. Mix well until evenly combined.
  4. Shape mixture into a loaf and place in a greased loaf pan.
  5. Bake for 45–50 minutes, or until internal temperature reaches 160°F (71°C).
  6. Top with extra salsa and cheese, then bake an additional 5–10 minutes until cheese is melted.
  7. Let rest for 5 minutes before slicing and serving.

Notes

Serve with Mexican rice, guacamole, or a fresh green salad for a complete meal.
